Kenya Sakami Anaerobic is an extraordinary specialty coffee, the result of a rare combination of high-altitude terroir, innovative processing methods, and a strong social and environmental commitment. Sourced from Sakami Farm, located 1,800 meters above sea level on the western slopes of Mount Elgon in Kenya's Trans Nzoia region, this coffee is the result of an ambitious agricultural project led by Gloria and Jarmo Gummerus, two visionary entrepreneurs committed to the sustainable regeneration of the land and local communities.

Sakami Farm is more than just a coffee plantation: it is a diverse agricultural ecosystem where macadamia trees, avocado trees, native plants, and natural water resources coexist, with beehives for natural pollination and protected wetlands that ensure soil health and biodiversity.

Kenya Sakami Anaerobic is the result of a controlled and natural fermentation experiment that enhances the aromatic potential of the raw material. The hand-selected cherries are fermented in sealed barrels immersed in water for approximately 24 hours, maintaining a constant pH of 4.3–4.4, without the addition of yeast or sugar. This anaerobic process allows for a slower and more uniform fermentation, developing deep, fruity, and floral aromas in an extremely clean manner. After fermentation, the cherries are dried on raised beds in the sun, following meticulous humidity management to ensure optimal drying.

The cup profile is intensely expressive and well-balanced: upon tasting, sweet and juicy notes of blackberry, ripe papaya, red fruits, plum, and brown sugar immediately reveal themselves, accompanied by a delicate floral undertone, hints of rose, and complex tropical notes. The body is full yet smooth, with a bright, rounded acidity reminiscent of the finest Kenyan coffees. The sensory experience is enriched by a lingering sweetness and aromatic cleanliness, making it ideal for filter brewing, Chemex, V60, Aeropress, and even low-temperature espresso.
