In the heart of southern Huila, amid the lush Andean mountains, lies Finca Las Flores — a coffee estate set within a land of volcanic origin, mild climate (17–25°C) and remarkable biodiversity. Recognized as the “Capital Cafetera Especial de Colombia” and awarded the Denominación de Origen in 2013, this region is one of Colombia’s most celebrated centers for high-quality coffee.
The Vergara family has been cultivating this land since the 1990s, but it was under Jhoan Vergara’s leadership that the farm underwent a complete transformation, focused on sustainability, experimental processing and varietal innovation. Today, Finca Las Flores stands as a symbol of modern Colombian excellence — combining deep agricultural heritage, scientific precision and an ethical approach to coffee production.
Among its most unique projects is the Microlot Washed Ombligón, a rare and remarkable coffee named after the seed’s distinctive “navel-like” shape. The Ombligón is an ancient Heirloom Arabica variety rediscovered in Colombia, valued for its density, aromatic complexity and sparkling clarity in the cup. At Las Flores, it is cultivated on small, carefully managed plots where every step of the process is monitored with precision.
The processing follows a meticulous, multi-phase protocol. Only the ripest cherries are hand-picked and sorted by floatation, ensuring density and quality. The beans then undergo a first fermentation in sealed barrels for about 36 hours, followed by mechanical depulping. Still covered in mucilage, they are immersed in a solution enriched with panela (unrefined cane sugar) for a second 36-hour fermentation, enhancing sweetness and aromatic depth.
After fermentation, the coffee is double-washed and subjected to a thermal shock with 60°C water, a technique that stabilizes fermentation and locks in the delicate fruit and floral compounds. Drying is carried out either in mechanical dryers or on raised beds, with continuous control of temperature and humidity, reaching optimal moisture in about five days.
In the cup, this coffee is refined and expressive. The aroma opens with jasmine and white flower notes, followed by layers of cherry, peach and red guava, accented by tropical tones of pineapple and mango. The sweetness is clean and silky, the acidity bright yet balanced, and the body velvety, with a long, elegant finish reminiscent of cane sugar and candied fruit.
As an espresso, the Washed Ombligón reveals a medium, velvety body and a surprisingly aromatic bouquet of wild berries. On the palate, notes of syrupy peach, strawberry juice and blackberry evolve into an elegant, lingering aftertaste. The cupping score of 88.75 confirms its precision and sensory harmony: medium body, balanced acidity and a vivid fragrance of strawberry, blueberry and blackberry both in aroma and in cup.
