Description

Finca Las Flores is located in the southern part of the Huila department, in the municipality of Acevedo, an area of volcanic origin known for its fertile soils, mild climate (17–25°C), and breathtaking Andean landscapes. Rich in biodiversity and home to the indigenous Andaquí cultural heritage, Acevedo proudly holds the title of “Capital Cafetera Especial de Colombia”. Since 2013, the coffees produced here have received the official Denominación de Origen, confirming Huila as one of Colombia’s most prestigious coffee-growing regions.

The story of Finca Las Flores began in the 1990s and continues today through the passion and dedication of the Vergara family. In 2013, Jhoan Vergara led a profound transformation of the farm, introducing new varietals—alongside the classic Castillo and Catimor—and implementing innovative sustainable agricultural practices aimed at enhancing cup complexity and aromatic expression. Today, Finca Las Flores stands as a benchmark in Colombian specialty coffee, celebrated internationally for its commitment to excellence and its mastery of advanced fermentation protocols.

Among the farm’s most remarkable achievements is the Washed Sidra Bourbon, a premium hybrid that combines the refined floral character of Sidra with the sweetness and structure of the traditional Bourbon. Grown between 1,750 and 2,000 meters above sea level, the plants benefit from the Andean microclimate’s slow cherry maturation, which allows sugars and organic acids to develop in perfect balance.

The process for this microlot is meticulous and multi-staged. Only the ripest cherries are hand-picked and sorted by floatation to remove any underdeveloped fruit. They are then placed in sealed barrels for a 36-hour fermentation, followed by mechanical depulping. The beans, still covered in mucilage, are then immersed in a mucilage solution enriched with panela (unrefined cane sugar) for an additional 36-hour fermentation, a step that enhances sweetness and complexity.

After fermentation, the coffee undergoes a double washing and a thermal shock with 60°C water, a precision technique that stabilizes the fermentation, brightens the cup, and amplifies its floral and fruity notes. The beans are then dried in mechanical dryers or on raised beds for about five days, until the ideal moisture level is reached, ensuring even drying and long-term flavor integrity.

In the cup, this coffee is vibrant, refined, and complex, with a juicy, full-bodied texture and remarkable aromatic depth. The fragrance opens with floral and fruity notes, evolving into layers of candied apricot, blood orange, and ripe mango, enriched by tropical hints of red guava and passion fruit. Its sweetness is clean and elegant, balanced by a bright yet delicate acidity and a silky mouthfeel. The finish is long, transparent, and persistent, with lingering impressions of candied peach and fresh rosemary.

As an espresso, it delivers a juicy, round body and intense aromatic clarity: floral notes intertwine with ripe fruit sweetness, creating a cup that is both expressive and harmonious.

With a cupping score of 89.50, the Washed Sidra Bourbon from Finca Las Flores represents one of the finest and most technically precise expressions of the Macizo Colombiano. Ideal for filter brewing methods such as V60, Kalita, and Chemex, where its clarity and complexity truly shine, it also performs beautifully as a sweet-profile espresso, offering an elegant, velvety, and persistent cup.
