Fernando Alfaro and José Enrique Gutiérrez are two fourth-generation coffee producers in El Salvador, driven by a deep passion for growing and producing high-quality coffee. Their dedication and expertise have led them to manage several plantations, including the renowned Finca La Providencia, Finca El Guarumal and Finca El Guamo.
Located in the Apaneca-Ilamatepec Cordillera region, in the department of Ahuachapán, the Finca extends over 70 hectares, between 1,100 and 1,300 meters above sea level. This farm borders an organic corridor near Parque Nacional El Imposible, an area rich in biodiversity and characterized by pure, fresh air. Fernando and José acquired this property about seven years ago, with the aim of producing excellent coffee while maintaining high yields. They manage the plantation through an integrated agricultural management system, which begins with careful soil analysis to identify and meet the specific nutritional needs of the land. During the non-productive season, they employ between 30 and 50 workers to carry out essential tasks such as pruning plants, applying fertilizers and controlling diseases, including coffee rust. This Farm is famous for the cultivation of Red and Yellow Caturra varieties, grown at an altitude of 1,200 meters above sea level. The distinctive processing method adopted here is "black honey". In this process, the coffee cherries are stripped of their skin, but a significant amount of mucilage — the sugary pulp — is left on the bean during drying. This technique requires careful management to ensure controlled fermentation, resulting in a rich and complex flavor profile. Tasting notes include dried apricot, wine barrel, dark chocolate, brown sugar and gardenia, with a sweet-tart texture and syrupy mouthfeel.
Fernando and José's commitment to quality is not limited to producing extraordinary coffee. Both come from families with a long tradition in the coffee sector in El Salvador and have been able to combine this heritage with innovative and sustainable agricultural practices. These include the use of soil tests for precise fertilization, regular pruning to maintain plant health, and constant monitoring to prevent disease. Their attention to detail and pursuit of excellence have made their plantations a successful model in the production of specialty coffee.
