Description
The history of this drink dates back two centuries ago, when the indigenous people of Sumatra and Java could not prepare a coffee with the berries collected from the plants because it was forbidden. They began to collect, in the plantations and forests, the semi-digested berries present in the civet's excrement. The latter is a small carnivore very similar to an Asian wild cat. Its diet includes the intake of coffee berries but also insects, small mammals, eggs or small reptiles. Among all these foods, the civet cat cannot digest the internal part of the coffee berries. The digestive enzymes are thus concentrated completely on the external part, eliminating any trace of bitterness and providing a light chocolate and caramel taste. And this is how one of the rarest coffees in the world was born, produced in tiny quantities in Indonesia. In the cup it is very full-bodied, liqueur-like and sweet. On the aftertaste notes of bitter orange jam, aromatic herbs and a hint of rhubarb.
