Description

Located in the heart of Central America, in the country of Nicaragua, Jinotega (pronounced "hee-noh-TEH-gah") is a special region known as the "City of Fog". Thanks to the volcanic soil, humid climate and unique microclimate of the area in the northern highlands of Nicaragua, between 1,000 and 1,700 meters, the coffees grown here hold a special place in the hearts of coffee connoisseurs around the world.

The fog that often covers the mountains acts as a natural protective umbrella, as it not only protects the coffee plantations from excessive heat, but also provides them with a longer maturation time, which results in more complex flavors and a better balance between acidity and sweetness in the beans. Nicaragua El Limon comes from the land of Finca El Limon, where coffee cultivation dates back 150 years, as coffee has been grown here since 1872. Located in the heart of the community of La Esmeralda, the plantation not only has a rich history, but its workers and owners also share a deep commitment to protecting the environment.

Finca El Limon cultivates 778 hectares, of which 381 hectares are dedicated to coffee cultivation. In the other areas, biological corridors have been created that allow the connection between mountain forests and farms, thus providing not only a natural habitat for wildlife, but also helping the natural regeneration of forests, contributing to the maintenance of biodiversity. Being the twelfth largest coffee producer in the world, 98% of its production is Arabica coffee, the cultivation of which provides livelihood to over 330,000 people in the country.

Coffee cultivation here takes place mainly on small, family-run farms, where traditional methods are used. Among the cultivated varieties, the most widespread is Caturra, which constitutes over 70% of Arabica plantations. The washed process is often used to process coffee beans, in which the skin and pulp of the coffee cherries are removed, the beans are fermented, and then washed in clean water. This process results in the clean, bright flavors characteristic of Nicaraguan coffees. A perfect balance develops between the bright freshness of citrus and the silky sweetness of vanilla, which becomes more and more complex with each sip.
