Specialty Microlot from the Cauca Department, in the heart of the Colombian Macizo (a UNESCO Biosphere Reserve). Grown by Neftalí Fajardo at Finca El Pedregal in Inzá, this Pink Bourbon is double-fermented (16 hours + 16 hours), triple-washed, and naturally sun-dried. In the cup: juicy body, complex acidity, and a refined aromatic profile with notes of peach, mandarin, chamomile, honey, magnolia, and a sweet citrus fragrance.
Finca El Pedregal is located in Inzá, in the Department of Cauca, one of Colombia's most promising specialty coffee producing regions. The terroir is influenced by the Colombian Macizo, a mountain range of great natural, hydrological, and environmental importance, recognized as part of the Andean Belt Biosphere Reserve.
This is the context in which Neftalí Fajardo, a producer deeply rooted in the Cauca coffee culture and renowned for the care he devotes to his lots, began his work. His production reflects a profound connection with the land, altitude, and climate of Inzá, elements that allow for clean, complex, and distinctive coffees.
This lot is a selection of Pink Bourbon, a variety highly prized in the specialty coffee world for its aromatic elegance, natural sweetness, and bright acidity. The process is refined with a 32-hour double fermentation: a process that contributes to a more precise, layered, and clean cup, enhancing the floral, citrus, and honeyed notes.
In the cup, it presents a complex and refined acidity. The fragrance recalls mandarin, lime, honey, and magnolia. On the palate, notes of peach, mandarin, chamomile, and honey emerge, with an elegant sweetness and a clean finish.
It is a bright, floral, and citrusy Colombia, ideal for those seeking an expressive, elegant specialty coffee that differs from the more classic Colombian profile.
